Ingredients: 300 g butter biscuits 200 g butter 350 g sugar 1 kg cream cheese 5 whole eggs 150 ml heavy cream 25 g corn starch 1 tbs lemon zest 1 tbs vanilla extract Instructions: 1. Preheat the oven to 170 C 2. Melt the butter slowly and finely crumb the biscuits 3. Mix the biscuits and the melted butter until the biscuits are moist 4. Take a 23 cm spring form cake tin and spray some oil on the bottom 5. Line the bottom of the cake tin with baking paper 6. Add the butter and biscuit mixture in the pan and bake for 10 minutes 7. While the tin is in the oven, prepare the cheesecake filling 8. Add 5 whole eggs in a bowl and the heavy cream and whisk them 9. Add in the lemon zest and the vanilla extract 10. Add in the corn starch and the sugar 11. Incorporate the cream cheese 12. Mix everything until all the ingredients are combined 13. Take out the baked crust and add the cheesecake mixture 14. Put the pan back in the oven and bake for 40 minutes at 170 C 15. The cheesecake will be ready when the edges are set, but the middle is still not completely set 16.
