This Fruit Cake is a soft, buttery, and fragrant cake loaded with a colorful mix of dried fruits. It’s quick to prepare, requires no soaking of fruits, and delivers a deliciously wholesome bite in every slice. Ingredients: Dried mixed fruits - 1½ cup (raisins, chopped apricots, cherries, cranberries, etc.) (225g) Flour - 1tbsp Butter - ½ cup (115g), softened Sugar - ⅔ cup (130g) Oil - 2 tbsp (30ml) Egg - 3 ((room temperature) Vanilla extract - 1 tsp Almond essence - ¼ tsp (optional) All purpose flour - 1¾ cup (225g) Baking powder - 1 ½ tsp Salt - ¼ tsp Orange zest from one orange Orange juice - ¼ cup (60ml) Cup - 240ml Tbsp - 15ml Tsp - 5ml Pan size 9×5 inch Pan size 9×5 inch (23×13 cm) Method Toss the dried mixed fruits with 1 tbsp flour and set aside. Beat butter, sugar, and oil until pale and fluffy. Add eggs one at a time, then mix in vanilla and almond essence. Whisk together flour, baking powder, salt, orange zest and orange juice. Fold the ingredients gently into the wet mixture. Add the floured mixed fruits and fold until just combined. Transfer batter to a greased pan and bake at 170°C (340°F) for 45–55 minutes, or until a skewer comes out clean. Cool before slicing. Enjoy!
