Authentic Jamaican Christmas Fruit Cake || Super Moist & Absolutely Delicious The most delicious rich fruit Cake, otherwise called: Black Cake, Rum Cake or Jamaican Christmas Pudding. Made with fruits soaking in rum and red label wine for more than a year. Christmas Fruit Cake Recipe Ingredients 1lb margarine 1lb sugar 4 medium eggs 1/2 tsp vanilla 1/2 tsp almond flavor 6 cups flour 1 tsp mixed spice 4 tsp baking powder 2 tsp nutmeg 6 tbsp browning 3 cups red wine 1 lb mixed fruits (soaked) Lime/orange juice Mollasie (1 tbsp) Bread crumbs Instructions 1). Cream margarine and sugar till light and fluffy. 2). Gradually beat in eggs one by one, stir in vanilla and almond flavor 3). Combin flour, mixed spice, baking powder and nutmeg. 4). Divide the flour mixture into three and liquid into two. 5). Fold the flour mixture into the creamed butter alternately with browning, red wine and fruits. 6)Scrape into greased and lined 12" tin.
