Thaw at room temperature before serving. 🧂 Ingredients: 1/2 tbsp dried onions 330 g all-purpose or bread flour 1 Tbsp granulated sugar 3/4 Tbsp dried dill or 1 Tbsp chopped fresh dill 1 Tbsp nigella seeds 1/2 Tsp curcuma 3/4 tbsp instant dry yeast 1 tsp fine salt 1/2 cup (115 g) cottage cheese or creamy ricotta cheese 1/2 cup (125 mL) warm water 30 mL extra virgin olive oil 1 large egg, at room temperature Egg wash, for brushing 👩🍳 Directions: 1. Mix the Dough In a large bowl (or the bowl of a stand mixer with a dough hook), combine: flour, sugar, dill, yeast, salt, ricotta cheese, warm water, onion powder, olive oil, nigella seeds,and eggs. Mix until the dough starts to come together. By hand: Turn onto a lightly floured surface and knead for about 5 minutes until smooth. By mixer: Knead on low speed for about 3 more minutes. Place the dough in an ungreased bowl, cover, and let rise at room temperature until almost doubled in size (about 90 minutes). 📌 Note: Doughs with dairy may rise more slowly due to the higher pH of milk ingredients. They are also less sensitive to temperature fluctuations, more forgiving overall! 3. Shape the Buns Lightly flour your work surface and grease a baking pan or put a parchment paper. Turn the dough out and divide it into 6 equal pieces. Shape each into a smooth ball and place them evenly in the pan. Cover with a clean tea towel and let rise at room temperature for 40 minutes. 4. Bake Preheat your oven to 180°C (350°F). 1. Brush the buns with egg wash, then bake for about 30 to 35 minutes, or until the tops are a deep golden brown. 2.
