In winter, Date Palm sap becomes an important part of rural culture, diet, and heritage. The sight of sap being collected from trees in the foggy dawn is enchanting. In villages, people relish fresh date palm sap, patali gur (solid jaggery), puffed rice, and snacks, along with a wide variety of colorful, flavorful pithas, kheer, and payesh. Housewives enthusiastically engage in preparing various pithas in their homes. Winter delicacies such as nakshi pitha, bhapa pitha, kheerpuli, dudhpuli, patisapta, chandrapuli, dudh chitoi, chitoi pitha, and dim chitoi carry the heritage of rural Bengal. Just as these pithas add charm to rural life, pitha festivals are also celebrated in urban areas. While winter brings joy, it also brings hardship for the displaced. During this season, the sight of people warming themselves around fires in household courtyards creates a mesmerizing scene. Trees and plants appear dull and lifeless during winter. Likewise, winter markets are filled with a wide variety of fresh vegetables. Poets and writers have created numerous literary works inspired by the winter season. Winter appears in poems, stories, songs, proverbs, plays, and novels in many forms.
