This culinary conquest led us to the Old City, an area that boasts of some of the most iconic, traditional Hyderabadi eateries. Hotel Nayaab, an establishment over three decades old, located right at the entrance of bustling Chatta Bazaar, Nayapul Road, Charminar, is a favourite amongst locals and tourists. Food Lovers’ Editor, Kripal Amanna catches up with Omer Aziz of Hotel Nayaab to understand the typical Hyderabadi fare served here. He explains how the Nihari, a broth that makes for the Paya Soup is slowly simmered over hours and also steps into the kitchen to discover the making of two extremely popular dishes. GOURMET ON THE ROAD RATING NIHARI this is a comforting dish perfect to be enjoyed on a nippy evening! you taste the nourishing goodness of the juices from meat bones and the warm spices. the thin veil of fat on top rounds off all flavours. the deep savouriness of fried onion and the fresh hit of coriander adds another layer to the nihari. rs 100. 9/10 MALAI PAYA/ PAYA MASALA definitely an indulgent take on the austere paya! the gravy is enriched with thick cream. the trotter itself is melt-in-the-mouth.
