Balai (Malai) means “upper top” in Urdu. It is a type of thick clotted cream created by slow heating with everyday (non-homogenized) whole milk and skimming off the top layer, and it originates from the Indian subcontinent. It’s highly valuable for adding richness to both sweet and savory dishes. People eat it as a spread on bread/buns or put it in tea as well. It enhances the taste to a high level. In some countries, non-homogenized milk is not available, so people can not make balai easily. By following this recipe, anyone can make this delicious balai and enjoy the taste of their homeland’s tea or desserts.
