This Thai noodle dish is not only SO easy to make, but consists of pure magic. You won't need to study in the mountains of Kathmandu to learn how to make it either, just apply some simple cooking techniques and use the right ingredients. Simple. In a small bowl, rehydrate the tamarind block with boiling water and mix until combined. 2. Press through a mesh sieve to remove any granular pieces. 3. Add your palm sugar, fish sauce, smoked paprika, white wine vinegar and soy sauce. Mix until thoroughly combined and you’ve got your pad Thai sauce. Pad Thai Method: 1. Place noodles in a bowl of warm water and soak for 20 mins. Drain and set aside. 2. Take your dried shrimp and blend in a blender or food processor until it becomes a fine powder. Place in a bowl and set aside. 3. Next, heat 2 tbsp vegetable oil in a wok or large pan on medium heat. Add prawns and cook for 5-6 mins or until they change colour. Set aside. 4. Add shallots and garlic and cook for 2 minutes. 5. Add the noodles and dried shrimp powder and incorporate. 6. Add the pad Thai sauce and cook for 2 minutes to fully incorporate into the noodles. 7. Next turn the heat on low. Move noodles to the side, add the additional 2 tbsp of vegetable oil and the eggs. Cook the eggs until lightly scrambled, then start stirring the noddles over and through the eggs and combine as the eggs start to scramble throughout the stir fry. 8. Next add your MSG, half the spring onions, half the peanuts, half the bean sprouts, and cook for 2 minutes. 9. Now turn off the heat, add the shrimp and mix in. Then garnish with remaining spring onions, bean sprouts and peanuts and serve with lime wedges on the side.
