It all started with a half-pound of potatoes on the counter and some arugula sitting in the fridge, begging to be used while they still could be. Add the diced bacon. As you can imagine, the kitchen starts to smell amazing as the bacon crisps up. Next, toss in the diced onion, letting it soak up all that smoky bacon flavor. Then come the pre-cooked potatoes so they’re soft and ready to get golden in the pan. You give everything a good toss, letting the onion and potatoes mingle with the bacon. After a couple of minutes, it’s time for the greens. Into the pan they go, with a big pinch of salt and a sprinkle of chili flakes for a little heat. The greens wilt down, turning vibrant and tender. To finish, you splash in a bit of water to deglaze the pan, scraping up all those crispy bacon bits stuck to the bottom. Cook off the water, check the salt, and you’re done. What you’ve got is a hash that’s got it all: crispy, smoky bacon; sweet onion; creamy potatoes; and greens that add a fresh, peppery bite. There’s just enough heat to keep things interesting, and every bite is a perfect balance of flavors and textures. Just pair it with a simple grilled protein. Or, honestly, add some cannellini or garbanzo beans and it’s a meal in a pan.
