Mexican Salad serves as a healthy side dish with your daily meals and is also a perfect accompaniments to main dishes Ingredients: 1/2 Cup Kidney Beans, Soaked & Boiled 1 Corn Roasted 1/2 Red Bell Pepper 5-6 Cherry Tomatoes, Chopped 2 Tbsp Parsley, Finely Chopped 1/2 Tbsp Olive Oil 1/2 Onion, Chopped Few Lettuce Leaves 1/2 Green Capsicum 1/2 Cucumber Sliced Red Raddish Pickled Jalapenos For Dressing- 1 Tbsp Olive Oil 1/2 Tsp Red Chilli Flakes 1 Tbsp Honey Juice of 1 Lemon 1 Tsp Oregano Method: In a hot pan add olive oil, onions, bell peppers and toss them for 10 secs and add garlic and toss again.
