This curry is pretty mild so if you like things nice and spicy then you might be a bit disappointed with the base recipe. I recommend adding about 2 tsp of chili paste if you want to add that zing to the curry. The ingredient list is pretty large for this recipe mainly because we’re making a butter chicken spice from scratch. You can find all the ingredients you need below. • 1 Tbsp. vegetable oil • 1 Tbsp. butter • 1 Onion • 4 garlic cloves • 2 Tbsp. Tomato Paste • 2 400ml/13 ½ Oz Can coconut cream • 4 Chicken Breasts Curry Spices • 1 tsp. cumin • 1 tsp. ground ginger • 2 tsp. garam masala • 1 tsp. ground coriander • 1 tsp. ground cardamom • ½ tsp. paprika • 1 tsp. ground turmeric Since we’re making the curry paste from scratch you will need to cook it in a separate pan or in a slow cooker that has a sear mode. Once prepared you can throw it all in the slow cooker and leave it to cook for 6 hours. It doesn’t’ really matter what cut of chicken you want to use for this but I personally prefer either I tend to avoid light coconut milk when making a curry as it does seem to curdle easier than the normal stuff. Also avoid boiling the curry as this too may cause it to curdle. If you’re finding the sauce is splitting, then I would avoid using light coconut cream as this tends to split easily. Leaving the lid off can also help prevent the sauce from splitting but you may find your curry drying out really fast.
