Recipe INGREDIENTS Base • 2 kg fresh amla (Indian gooseberry), spotless • 2 kg beetroot Sweetener • 2 kg mishri (rock sugar – crystals or thread mishri) Digestive Spice Mix • 4 tbsp rock salt (sendha namak) • 4 tbsp ajwain (carom seeds) • 4 tbsp saunf (fennel seeds) • 4 tbsp sendha namak (rock salt) • 4 tsp hing (asafoetida) Final Touch • Dried paan (betel) leaves, chopped (optional but highly recommended) ⸻ 👩🍳 METHOD 1. Wash the amla thoroughly and wipe it completely dry. Moisture can reduce shelf life. Grate the amla using a grater. 2. Peel the beetroot and grate it as well. Combine grated amla and beetroot in a large bowl. 3. Mix the grated mixture well using clean hands until juices start releasing. You will notice a beautiful natural dark red colour forming—no artificial colour needed. 4. Powder the mishri into a fine powder and keep it aside. 5. In a blender, add semdha namak , ajwain, saunf, black salt and hing. Grind everything into a fine powder. 6. Add the powdered mishri and prepared spice mix to the grated amla-beetroot mixture. Mix thoroughly using hands. 7. As you mix, the mixture will naturally release water. This is completely normal and helps in natural preservation. 8. Once mixed well, rest the mixture for 1 hour so that the mishri dissolves completely and flavours settle. 9. Spread the mixture evenly on a plastic sheet in a thin layer. 10. Dry it under a fan for 10–15 days. Mix once daily to ensure even drying. 11. Do not sun-dry, as sunlight can fade the colour and reduce nutrients. 12. Once fully dry and chewy, add crushed dried paan leaves and mix gently. 13.
