This brown butter banana loaf is soft, fluffy and full of nutty flavour. I wanted something lighter than traditional banana bread — more like a muffin in texture, but baked as a loaf. Perfect for valentine baking coming up as well💌❤️. The brown butter adds depth, the bananas keep it moist, and the crumb stays airy instead of dense. Perfect with coffee or just warm from the oven. ⸻ Ingredients • 115 g unsalted butter (browned) • 2 very ripe bananas (about 220–240 g mashed) • 3/4 cup light brown sugar • 1/4 cup white sugar • 2 eggs • 1 tsp vanilla • 1/4 cup milk • 1 3/4 cups plain flour • 1 1/2 tsp baking powder • 1/4 tsp baking soda • 1/2 tsp salt • optional: 1/2 tsp cinnamon ⸻ Method 1. Brown the butter until golden and nutty. Let cool slightly. 2. Mash bananas. 3. Whisk brown butter with both sugars. 4. Add eggs and whisk until smooth. 5. Stir in banana, milk and vanilla. 6. Fold in flour, baking powder, baking soda and salt. 7. Pour into lined loaf tin. 8. Bake at 170°C for 45 minutes. Cool before slicing for the best texture. ⸻ Pro tips❤️ • Don’t overmix the batter. • Use very ripe bananas for sweetness and moisture. • Sprinkle a little sugar on top before baking for a crackly finish.
