As we know, besides the unique white and red wines of Spain we've discussed in previous episodes, there are two other renowned categories in Spanish wine: sparkling and fortified wines, with Cava and Sherry as their typical representatives. In this chapter, we will thoroughly analyze Spain's largest production sparkling wine - the Cava DO region, its production areas, climate and viticulture, grape varieties, and winemaking processes, providing background knowledge on this category. We will then discuss how this category can be identified in blind tastings by combining flavors and structure. At the same time, we will introduce the terroir of sherry wine-producing regions in Spain, the winemaking process of sherry wine, and discuss the styles exhibited by different categories of sherry wine during blind tasting.
