8 oz of softened cream cheese 1 can of sweetend condensed milk 3 tbsp of lemon juice 1 21oz can of crushed pineapple (drained, reserve juice) 1/2 - 3/4 cup of chopped mascherano cherries 1/2 cup of chopped toasted pecans 1 small container of Coolwhip 9-10 inch deep dish graham cracker crust (this recipe will make two Pies if using the store bought crust) Optional Ingredients 1/2 cup of sweetened coconut 1 cup of miniature marshmallows In a large mixing bowl, mix together the first 3 ingredients. Mix at medium speed until smooth. Fold in remaining ingredients. If filling is too thick, add remaining pineapple juice one tbsp at a time for desired consistency. Pour filling into pie crust. Chill at least 4 hours before serving. Garnish with cherries and pecans. This pie freezes beautifully. Just thaw 2 hours in the refrigerator before serving. Enjoy!
