Today, we're making creamy red lentil dal – a rich, aromatic, and healthy stew that pairs perfectly with rice or naan. You can customize this recipe to your liking by adding your favorite spices or vegetables. Ingredients: ✔ 1 chili (or to taste) ✔ 1 medium onion ✔ 2 medium-sized or 1 large sweet potato ✔ 2 garlic cloves ✔ 300g red lentils ✔ ½ tablespoon tomato paste ✔ 2 teaspoons curry powder ✔ 1 teaspoon cumin ✔ 1 teaspoon paprika ✔ ½ teaspoon ginger ✔ 1 can chopped tomatoes (400 ml) ✔ 700 ml water or vegetable broth ✔ 200 ml coconut milk ✔ Olive oil, salt Preparation: 1️⃣ Remove seeds from the chili and dice it. Chop the onion to your preference, peel the sweet potato and cut it into small cubes. Mince the garlic. 2️⃣ In a little olive oil, sauté the onion, chili, and garlic for about 4 minutes. Add salt to help the vegetables soften faster. 3️⃣ Add the tomato paste, curry powder, cumin, paprika, and ginger, and sauté briefly until the spices release their fragrance. 4️⃣ Stir in the chopped tomatoes, broth (or water), and coconut milk, then season with salt to taste. Add the lentils and sweet potato, stir, and bring to a boil. 5️⃣ Cover and cook on low heat for about 30-40 minutes, stirring occasionally. If the mixture is too thick, add a little water. 6️⃣ When the lentils and sweet potatoes are soft, adjust the spices and remove from heat. 7️⃣ Serve with rice or naan, and optionally add a little Greek yogurt and fresh parsley.
