Biko - sweet sticky rice cooked in coconut milk and brown sugar and a popular Filipino native dessert. #biko #bikorecipe #bikosweetstickyrice BIKO RECIPE Ingredients: 2 cups glutinous rice 2 cups water (for cooking the rice) 810 ml coconut milk 2 cups brown sugar 1 tsp vanilla extract Method: 1. Wash and drain 2 cups glutinous rice, then add 2 cups of water, then cook in a rice cooker. Set aside. 2. In a large pan, mix coconut milk and brown sugar, bring to a boil, stirring from time to time, until sticky consistency is reached (approximately 30 minutes). Sauce should be brown and sticky. 3. Remove a third of the sauce. Set aside for topping. 4. Put cooked glutinous rice into the remaining sauce in the pan. Mix until well combined. 5. Transfer into a 24 cm square pan. 6. Top with the sauce which was put aside. 7. Place a in a pre-heated oven 170 degrees Celsius convection or 190 degrees conventional setting and bake for 30 minutes or until sauce topping on top is reduced and caramelized. 8. Allow to cool before slicing and serving. Enjoy!
