Cooked Rice Cooked rice may contain heat-resistant spores of Bacillus cereus. If rice cools slowly or is stored improperly, these spores can germinate and produce toxins that cause food poisoning—even inside the fridge. Best storage: Consume as soon as possible. If storing, cool quickly and keep in a shallow, airtight container. 2. Tomatoes Tomatoes continue to ripen after harvest, developing their natural flavor and aroma. Cold temperatures disrupt this process, resulting in a mealy (grainy) texture and dull taste. Best storage: Keep at room temperature (18–22°C), away from direct sunlight. 3. Potatoes Refrigeration causes potato starch to convert into sugars like glucose and fructose. When cooked, these sugars can create unpleasant flavors and potentially harmful compounds such as acrylamide. Best storage: Store in a cool, dark, well-ventilated place (10–15°C). 4.
