I made a nice big batch of Scottish jam crumble shortcake :) Seriously easy to make…all done in the one pan and very yummy indeed! Perfect with a cup of tea (or coffee!) or even with vanilla custard on those chillier days. Everything I used will be listed below, take care, -Cheryl x ______________________________________________________________________________________________________ What did I use? 7 x 10 inch baking tray - lined with non stick paper Servings- 9 good servings How long? 10 minutes prep and 40 minutes baking time Ingredients used - 250g (8.8 oz) Unsalted butter - room temperature 100g (3.5 oz) Caster sugar - ordinary granulated white sugar would also be fine 2 Medium eggs 3 Tablespoons vegetable or sunflower oil 2 Tsp vanilla extract 500g (17.6 oz) Plain or all purpose flour + an extra 150g for the crumble topping 3 Tsp baking powder 300g (10.5 oz) Jam - I used raspberry but use whatever you like, strawberry is amazing too!
