Kolkas or Ol2as. Taro is a popular root vegetable in Egypt and this stew is a perfect way to use it. Full of fresh coriander. Give this recipe a try. The key is in the tasha. Recipe below #middleeasternrecipes #egyptianfoodies Ingredients: 2 bags of kolkas (with 2 bags of mixed greens) - Gold Alex brand has this 1 fresh coriander 1/2kg meat Cardamon seeds 7 spice Bayleaf Beef stock 2 onions 8 garlics 1tsp cumin 1tbsp coriander Salt to taste 1/2 tsp chilli Lemon Method: Meat soup: fry meat, then add onion, 2 garlics, 7 spice, salt, pepper, beef stock, cardamon seeds and bay leaf. Pressure cook in 20 min or cook normal for 2 hours. Separate pot: Fry onion then add fried meat then add 1.5-2l meat stock from above then add ok2as (2packs of gold alex) and mince in a blender one fresh coriander and sift the juice and add that green juice to pot. Then add coriander and greens from ol2as pack to the meat soup. Take 2nd pack of greens and fry in butter then add into soup. Once all cooked, switch of heat. Then make the tasha and add to the ol2as soup. Tasha: fry in butter 6 crushed garlic with a little cumin and more coriander salt and a little chilli if u want (mix all components before frying) and add the tasha to the soup at the end. Add a squeeze of lemon to the soup once finished and enjoy on a bed of basmati rice 😋
