Canning pizza sauce and here is the recipe: 22 pounds of fresh tomatoes 3 cups chopped onions 6 cloves garlic minced 1/4 cup olive oil 2 T. dried basil 1 T. dried regano 1 T. dried thyme 1 T. dried parsely 1 t. black pepper 1T. sugar or honey or to taste 2 T. salt Bottled Lemon juice or citric acid: 1 T. lemon juice OR 1/4 t. citric acid for each pint size jar. Wash, core, and halve tomatoes. Cook tomatoes until soft. Put through a strainer to remove the seeds and skins. In a large stockpot cook onions and garlic in the olive oil. Cook over medium heat until onions are soft, 5-7 minutes. Add tomato puree and all the seasonings. Bring to a boil, reduce heat and cook for about 30 minutes, uncovered. Process with an immersion blender to make a smoother sauce. Bring back to a boil, reduce heat and simmer, uncovered, until sauce reaches desired consistency. Usually take 1-2 hours. Make sure to stir occasionally to prevent sticking. To can: add the lemon juice to citric acid to each clean jar, warm jar, fill jar with sauce leaving 1/2 inch headspace. Place the lids and rings on until fingertip tight. Place in canner rack and repeat with remaining jars. Process both pints and half pints for 35 minutes in a water bath canner. This recipe yields 8 pints. Happy Canning!!!
