hev Bhaji Recipe | Learn how to make hotel style Shev Bhaji at home with a perfect spicy rassa. This Maharashtrian Sev Bhaji is made using a flavorful masala paste, aromatic spices, and crispy sev that turns this curry into an unforgettable dish. This spicy Sev Bhaji is famous all over Maharashtra and is enjoyed with bhakri, chapati, roti, naan, or pav. For Vatan: Dry Coconut | सूखा नारियल : 1/4 Cup (grated) Oil | तेल : 1 TBSP Onion | प्याज : 2 nos. (sliced) Ginger | अदरक : 2 Inch Garlic | लहसुन : 10–12 cloves Tomato | टमाटर : 1 no. (roughly chopped) Salt | नमक : a pinch Hot Water | गरम पानी : a splash Water | पानी : as required 2. For Tadka: Oil | तेल : 3–4 TBSP Cumin Seeds | जीरा : 1/2 TSP Asafoetida | हींग : 1/4 TSP Curry Leaves | करी पत्ता : 12–15 nos. Onion | प्याज : 1 no. (chopped) 3. Final Shev Bhaji: Spicy Red Chilli Powder | तीखी लाल मिर्च पाउडर : 1 TBSP Kashmiri Red Chilli Powder | कश्मीरी लाल मिर्च पाउडर : 1 TBSP Turmeric Powder | हल्दी : 1/4 TSP Cumin Powder | जीरा पाउडर : 1/2 TSP Coriander Powder | धनिया पाउडर : 1 TSP Garam Masala | गरम मसाला : 1/4 TSP Hot Water | गरम पानी : as required Salt | नमक : to taste Spicy Sev | तीखी सेव : 2 Cups / 120 grams Lemon Juice | नींबू का रस : 1/2 lemon Fresh Coriander | हरा धनिया : a handful (chopped) ===== Process and Method: Heat a pan on high flame. Once it is moderately hot, add the dry coconut and roast it on low flame, stirring continuously, until it turns golden brown. Transfer the roasted coconut to a bowl and keep it aside. Using the same pan, add oil and heat it well. Add onions, ginger, and garlic, then sauté on high flame until the onions become golden brown. Add tomatoes and salt, mix well, and cook on high flame for 1–2 minutes. Sprinkle a little hot water, cover the pan, and cook on low flame until the tomatoes soften completely. Transfer this mixture to the bowl with the roasted coconut and allow it to cool to room temperature. Once cooled, grind everything into a smooth paste using water as required. Place a kadhai on high flame and add oil. Once the oil is hot, add cumin seeds, asafoetida, curry leaves, and onions. Sauté on high flame until the onions start turning golden. Reduce the flame and add all the powdered spices along with a splash of water. Mix well and cook on high flame until the oil starts separating from the masala. Now add the prepared paste and cook on high flame, stirring continuously, until the mixture becomes crumbly and releases oil. Add hot water to adjust the gravy consistency along with salt. Let it simmer on medium flame for 5–6 minutes. Keep the gravy slightly thin at this stage, as it will thicken later while cooking and after adding the sev. Taste the gravy and adjust salt if needed. Add sev, lemon juice, and fresh coriander, then mix gently. Your flavorful Shev Bhaji is now ready.
