I cannot tell you how many memories I have sharing an after dinner drink with family enjoying this very elixir. The waiting is the hard part of this but as you see it is very easy to make. It was wonderful finishing this up at the same time my beautiful daughters came for a visit! Limoncello INGREDIENTS Limoncello 750 ml bottle of 75-percent volume alcohol (recommended: Everclear Grain Alcohol) 8 lemons (washed with warm water) 750 ml water 2 cups honey DIRECTIONS First stage: Peel the lemons, making sure to only separate the yellow part of the peel from the fruit, and not go too deep. Place the peels in glass jars, possibly big enough to accommodate all the ingredients in the recipe, seal tight and let rest for two weeks. Second stage: After macerating for two weeks, the alcohol is now ready to be drained and mixed with the water and honey. Drain the lemon peels from the jar and make sure everything is out of the jar. Mix the water and honey in the glass jar until completely mixed. Pour the alcohol back into the jar with the sweet water and mix. At this time you can give it a taste test but it is best to wait at least another two weeks. Then you can bottle it for storage and enjoyment!
