Banana Cake with Maple Cream Frosting | Old Fashioned Banana Cake Today’s recipe comes to you from my dear great grandma Verda! She was a killer baker and made an amazing banana cake. She did everything the old fashioned way and it always tasted the best! Together grandma Verda along with my great grandpa Ray, owned the 3rd largest poultry farm here in Michigan. When she wasn’t on the farm working, she was inside cooking and baking away! She was known for being the best baker and this banana cake is no exception! It is so moist and delicious it really doesn’t even need a frosting. But I figured, for aesthetics I would top it with a delightful maple buttercream cheese frosting. YUM! My husband Mike was hit by a SUV on his way to work last Friday. The driver was on her phone and ran through the red light. Mike’s car is destroyed but he managed to escape with the help of EMS with some cuts and a very stiff and sore body. She hit him going 50 MPH without even trying to break. I am so thankful Mike is still alive but we are shook up and are trying to get him back to full health. KEEP AN EYE ON ME: • INSTAGRAM: / mrsbudzyn • FACEBOOOK: https://goo.gl/VYPIVs • SNAPCHAT: CBUDZYN5 • GOOGLE+: https://goo.gl/h1bWyR ------------------------------------------------- | Ingredients | Cake: ½ Cup Vegetable Shortening 1 ½ Cup Granulated Sugar 1 Teaspoon Pure Vanilla Extract 2 Eggs 1 Cup Mashed Bananas (About 3 bananas) 4 Tablespoons Buttermilk 2 Cups All Purpose Flour ½ Teaspoon Baking Soda ½ Teaspoon Salt Frosting: 1 8 Ounce Package Cream Cheese, Softened 1 Stick Butter, Room Temperature 3 Tablespoons Maple Syrup 1 ½ Cups Powdered Sugar Optional: ½ Cup Pecans for topping | Directions | Cake: In a standing mixer, cream together the vegetable shortening, sugar, and vanilla until well combined. Add eggs one at a time, mixing well after each addition. Add mashed bananas and buttermilk and combine. In a separate bowl, combine flour, baking soda, and salt. Slowly add the flour mixture to the banana mixture, mixing until just combined. Pour into a 13” x 9” greased baking dish. Bake at 350 for 20-30 minutes or until a toothpick inserted comes out somewhat clean. Start checking on it at the 20 minute mark. Don’t bake it too long or it will be dry! Allow to cool completely. Frosting: In a mixer, beat together cream cheese, and butter until fluffy and smooth. Add maple syrup and powdered sugar, mixing until smooth and creamy. Smear on top of the completely cooled cake, top with pecans, and you are ready to serve! Enjoy!
