This Achari Chicken Biryani is the perfect dish for your Iftar or Suhoor during Ramzan! Packed with aromatic spices, tender marinated chicken, and fragrant rice, this biryani is a must-try for a fulfilling and delicious meal. 💛 Ingredients: For marination: Chicken on the bone (big pieces)– 1 Curd - 400 gm Turmeric powder – 1/2 tsp Red chilli powder - 1 tsp For the gravy Mustard oil – 2 tbsp Regular oil- 2 tbsp Bay leaves- 2 Onions (sliced) – 2 medium Garlic paste – 2 tbsp Ginger paste – 1 tbsp Slit Green chilies – 3 to 4 Achari masala – (link in bio) - 3-4 tbsp Tomatoes (puréed) – 2 medium Salt to taste Turmeric powder - 1/2 tsp Red chilli powder - 2 tsp Dhania powder - 1 tbsp Jeera powder - 1tsp For layering 80% cooked Rice – 4 cups (recipe in bio) and 1/2 cup the water if was boiled in. Saffron infused milk- 2 tbsp Ghee - 2 tbsp Coriander leaves Mint leaves Method: 1. In a bowl, marinate the chicken with yogurt (dahi), salt, turmeric powder & red chilli powder. Set aside. 2. In a pot, heat mustard oil & the regular oil. Add bay leaves, followed by the sliced onions. Once they are golden brown, add the ginger and garlic paste and sauté till fragrant. 3. Add the slit Green chillies now along with the Achari Masala. 4. Cook it for just a few seconds as you don’t want the masala to burn. 5. Then add the Tomato purée and cook till it thickens and the oil starts to separate. 6. Now add the marinated chicken and cook until it becomes 80 % tender. 7. To layer the Biryani, add the rice water, then half the cooked rice on top of the chicken. Then add some brista , coriander leaves and mint leaves. Now add the remaining rice, pour some saffron infused milk and a drizzle a generous amount of ghee. 8. Cover with silver foil and close with the lid. 9. Let it cook on high flame for 5 mins and then on low for another 15 minutes. 10. Then allow it rest for another 10 minutes before serving. 11.
