Today I'm testing out the viral "Jennifer Aniston" Salad! Spoiler alert--she never actually ate this salad on the set of Friends, but it's still an awesome recipe! Jennifer Aniston Salad 1 c. quinoa, rinsed thoroughly 2 c. water 1 English cucumber, diced 1 bunch fresh mint, chopped 1/2 bunch fresh parsley, chopped 1 small red onion, finely diced 1/2 c. chopped pistachios 1-15 oz. can chickpeas, drained and rinsed 1/2 c. crumbled feta cheese 1/4 c. extra virgin olive oil 2 lemons, juiced salt & pepper Cook the quinoa--add the water, quinoa, and a generous pinch of salt to a medium saucepan. Bring to a boil. Cover and reduce heat to LOW. Simmer for 15 minutes. Remove from heat and allow to sit for 3-5 more minutes (or until all water is absorbed). Fluff with a fork. In a large bowl, combine the cooked quinoa, cucumber, mint, parsley, onion, pistachios, chickpeas and feta cheese. Drizzle the olive oil and lemon juice over top. Season with salt and pepper. Stir to combine. Cover and refrigerate for at least an hour before serving. ENJOY! Please SUBSCRIBE!
