This Indian tomato rice recipe is one my mom taught me and it is a one-pot dish that is incredibly flavorful, creamy from coconut milk, and comes together in about 30 minutes. What I love about this recipe is how simple it is. If you're looking for an easy, cozy meal that doesn't require a ton of chopping or complicated techniques, this is it. INGREDIENTS: 1 cup basmati rice 2-3 tablespoons ghee (or butter) 1 cinnamon stick 3-4 cardamom pods 3-4 cloves 1 bay leaf Small handful of cashews 2-3 garlic cloves, sliced 1/2 medium onion, sliced 1 cup passata (tomato purée) 1/2 teaspoon chili powder Salt to taste Pinch of sugar 1/2 cup coconut milk 1/2 to 3/4 cup water 1/2 cup green peas, boiled (optional) Recipe: Soak 1 cup rice for 20-30 minutes, then drain Heat ghee in a saucepan over medium heat Add whole spices (cinnamon, cardamom, cloves, bay leaf) and bloom for 30 seconds Add cashews and toast for 1 minute Add sliced garlic and onions, cook until softened and slightly caramelized Add salt, then stir in passata Add chili powder, pinch of sugar, coconut milk, and water Gently fold in the drained rice Bring to a boil, then lower heat, cover, and cook for 15-20 minutes until rice absorbs liquid Fold in boiled green peas (optional) Serve with raita, protein of choice, pickle or papad!
