It's always hard to duplicate something you've had on vacation that you can't buy at home, but this recipe comes close!! Hawaii is famous for thousands of things and in the food category, there is a lot of delicious fish to be enjoyed. One of our favorite things to get when we're there is a simple store-bought dip by Kokohead Foods called "Smoked Ahi Dip" and if you've ever had it, you KNOW what I'm talking about!!! This recipe isn't exactly the same but wow it'll do the trick until I can someday go back to the islands. My version is so, so easy to whip up! And if you're serving a crowd, people won't believe how simple it is...all they will talk about is how delicious it tastes! This wins all around in my book - inexpensive to make, easy, fast, incredibly yummy and it's even gluten-free! WHOA!! Here's what you need to know... SMOKED TUNA DIP -- 5oz albacore tuna - drained well if using canned tuna (Albacore is preferred over "Chunk Light" which has a stronger taste...it's more mild in flavor) 8oz cream cheese (I used "light" and it turned out well) 1/2 tsp garlic powder 1/4 tsp salt 1/4 tsp black pepper 1 1/2 tsp liquid smoke 1 tsp Worcestershire sauce 2-3 dashes of hot sauce 2-3 T fresh chives - minced OR green onions - minced Smoked paprika - to garnish In a large bowl, mix together all of the ingredients. Using a hand mixer will make this super fast but mixing by hand is perfectly fine. Place the dip into a serving bowl and chill for at least 30 minutes. Before serving garnish this with smoked paprika on top and a bit of fresh chives or green onions. Serve with crackers, pita chips or even fresh veggies. YUM!!
