Instagram: @zola_nene & @zola_feasts Facebook: Zola Nene Chef Twitter: @zola_nene Tiktok: @zola_nene & @zolaxzamo Lamb Knuckle Stew Serves 4 Prep Time: 25 minutes Cooking Time: 2hrs 1.5kg lamb knuckles 2 Tbs ZOLA’s Feasts Spice 1 Tbs steak & chops spice 2 Tbs oil 2 onions, peeled & chopped 3 carrots, peeled & chopped 2 Tbs garlic & ginger paste 1 Tbs thyme leaves 2 Tbs tomato paste 1 Tbs sugar 750ml beef stock 3 potatoes, peeled & quartered Season lamb with Zola’s Feasts spice and steak & Chop seasoning, then brown in hot oil until golden on both sides (you can do this in batches so you don’t overcrowd the pot). Set browned lamb aside. add onions and carrots, sauté until onions begins to soften. Add garlic & ginger paste, thyme , tomato paste and sugar, then cook for a few minutes to cook the tomato paste. Add stock and bring to a simmer, cover with a lid and leave to cook for 45 minutes or until the lamb is tender. Add the potatoes, season to taste then simmer until the potatoes are cooked through.
