Double recipe for two layer cake!!) Ingredients: 1.5 cups whole wheat pastry flour or wheat flour 1 cup raw sugar 1 tsp baking powder 1 tsp baking soda 1 tsp ground cinnamon 1/2 tsp salt 1.5 cups unsweetened applesauce 1 generous tsp of vanilla extract 1 cup carrots, peeled and shredded Enough frosting. (Recipe below, but it will look much better with a WHITE vegan cream cheese frosting) Directions: Preheat oven to 350F. Cut out some parchment paper for the bottom of the 9 inch baking pans. In a medium bowl, whisk flour, sugar, baking powder, baking soda, cinnamon and salt together. In a large bowl, combine applesauce, vanilla and carrots. Add dry mixture to wet mixture in 3-4 batches, stirring until just combined. Fill backing pan(s) with cake mixture. Remember, this makes one layer. Double recipe if you want two layers. Bake at 350F for 45 minutes for cake pans (18-25 mins for cup cakes). Remove cake from oven, let cook for 20 minutes. Invert cake out of pan and let it cool on a wire rack. Once cool, frost and serve. ____________________________________________________ Frosting Recipe: (If you are not worried about fat, use a nice, white packaged frosting) Ingredients 1 1/2 cups raw cashews (soaked in water for 2 hours) 1/2 cup coconut milk 8 medjool dates 1/4 cup lemon juice 1 tsp vanilla Directions: Blend all ingredients in a high speed blender until smooth. This frosting goes on a nice off-white color but it turns brown/translucent by the next day. I wound not recommend it if you are eat the cake the next day. But, it IS a whole food recipe so if that is important to you, its a good options.
