Potates, carrots and peas cooked in a tantalizing spicy curry. Can be served with naan bread, roti (chappati) or even rice. List of ingredients and method is below, enjoy! :) Ingredients 2 large onions - sliced 7-8 tomatoes - chopped 5-6 cloves of garlic - grated an inch piece of ginger - grated 2 green chillies - diced 10 baby potatoes - diced 5 carrots - chopped half a cup of frozen peas a handful of chopped corriander For spices you will need: 1 tablespoon of salt - level 1.5 teaspoons of red chilli powder 1.5 teaspoons of garam masala a generous pinch of crushed black pepper a sprinkling of red chilli flakes - optional Start off by preparing your ingredients: peeling, washing, chopping up/slicing and grating etc. Note: You can peel the potatoes, however i did not, only because it saves time and it doesn't really make a difference. Also, pre-cooking the potatoes half way saves ALOT of time, so please do this before hand. Boil the potatoes for about 8mins, slightly under cooked so that they don't mush up once we actually add them to the dish. When that's all done, add some veg oil or olive oil to a deep saucepan, heat this up and add your sliced onions to fry. You want the onions to be golden brown when you add in your grated ginger and garlic. Keep stirring everything and then when your onions are a slightly dark brown colour, add in your chopped green chillies and tomatoes. These need to break down (thats why I place the lid on). After this, add the spices, and cook untill you see the oil appearing to the surface - it should all look well combined. This is the perfect time to add in your veggies: potatoes, carrots and peas. You need to mix thoroughly and cook with the lid on for about 12 mins. Check if the veggies are cooked by pricking them with a folk or simply biting into them. When you think that the curry is almost ready, add some chopped up corriander and stir in. I added chilli flakes at the end because I prefer this: if you don't want that extra kick, don't.
