This Sichuan dish is so nice, we had to cook it twice. With minimal ingredients and tons of flavour this dish is sure to please! We served this with some white rice to absorb all the delicious flavour from the sauce, snow pea leaves and la zi ji for a complete family meal. If you recreate this dish please tag me as I would love to see and feature your creation! #chineserecipe #spicy #pork Recipe ------------------------------------------------------------------ Ingredients: o 1lb pork belly o 6 Chinese leeks o 2 thumbs of ginger o 6 garlic cloves o 2 red chilis o 2 tbsp chili bean sauce (dou ban jiang) o 1 tbsp fermented soybean o 2 tbsp soy sauce o 1 tbsp peanut oil Once cooked pork: o Fill a bowl ¾ of the way with water o Add pork belly, 1 slice thumb of ginger, 2 smashed garlic cloves and 2 Chinese leeks o Bring to a boil o Cook for 20-30 minutes, until you can stick a chop stick through the pork o Take out pork, let rest until it reaches room temperature Mise en place: o Mince garlic and ginger o Chop red chili and Chinese leeks o Finely chop fermented soybean into a fine paste o Once cooled to room temperature, thinly slice pork belly into 2-3mm slices Twice cooked pork: o Heat oil in wok over medium/high heat o Fry pork belly slices, alternate between laying pieces flat for 1-2 min and mixing them around to evenly fry each piece o Move pork to perimeter of wok o Add ginger, garlic and sauces to the wok and mix well, cook until fragrant o Add red chili cook for 30 seconds o Add Chinese leek and quickly fry until all ingredients are combined o Plate, serve with white rice and enjoy!
