Hi everyone! This week, we're making pot roast, but not just any old pot roast! We're making a balsamic pot roast that just puts every other pot roast to shame! So let's get cooking! Balsamic Pot Roast 1-2 pound chuck roast 4-5 gold or russet potatoes 3-4 carrots Half of a medium onion 3 cups concentrated beef broth (divided) 1/3 cup balsamic vinegar 1/2 cup red wine vinegar 1/4 cup packed brown sugar 6 garlic cloves, minced or crushed Salt/pepper 1-2 tablespoons oil 1. Preheat oven to 325 Fahrenheit. 2. In a small to medium bowl, add balsamic vinegar, red wine vinegar, brown sugar, minced/crushed garlic, and 1 cup of concentrated beef broth. Whisk to combine and set aside. 3. Prep: Wash, peel, and slice carrots into 1/4-1/2 inch rounds. Wash potatoes and cut into large chunks (skin optional). Set carrots and potatoes to the side in covered bowls. Chop half onion into medium to large chunks. 4. Salt and pepper all sides of the chuck roast. 5. Add oil to a Dutch oven or heavy-bottom oven safe pot and heat over medium low to medium heat. When pan is hot and oil is shimmery, sear all sides of the chuck roast (this will not cook fully, we just want to brown the sides). When roast is browned, remove and set to the side. 6. Add chopped onion to the pot and cook until slightly browned. If the bottom of the pan starts to get too dark, turn heat down to low and add a little of the balsamic vinegar mixture. 7. Add beef back to the pan, and pour in the balsamic vinegar mixture. Cover and place in 325 Fahrenheit preheated oven for 1 hour. 8. Remove pot from oven, add carrots and potatoes. Pour in remaining 2 cups of concentrated beef broth. Stir to mix everything up, cover again, and place back into the oven for 1 and a half to 2 hours. 9. Remove pot from oven, remove beef from pot, and shred. Return beef to pot and stir. Pot roast is ready to serve!
