Why Is Flash Frozen Better than Fresh? Have you ever had the same experience as I've had when trying to buy fresh fish? What happens is very often I can smell the fish from the next aisle over. It's not appealing at all. Have you every seen frozen fish that's all dark and dense? It's so frustrating because I love fish and it's difficult to find good quality without spending an arm and a leg. So what I end up doing is going to the most expensive markets just to try and get the freshest fresh I can. That is, until I found FLASH FROZEN. Flash frozen is the freshest fish I've ever found. Flash freezing is a term used in the food industry to quickly freeze fresh food and keep it in its freshest state. Flash frozen fish is frozen within hours of being caught, and it's preserved at its freshest point. What happens is that food is frozen at temperatures well below freezing (32°F or 0°C), and this causes the water inside the food to freeze immediately. This means the food doesn't have time to form large crystals, which damages the cell membranes. What's really amazing is that you just put the frozen fish in cool water and in 10 minutes it is defrosted, has virtually no odor, and tastes like the freshest fish you've ever eaten.
