Step into a beautifully slow week in the French countryside, where simple pleasures take center stage. This week, I painted our new chicken coop—practicality meets charm. I wandered through the woods, watching spring unfold in delicate blossoms and sun-dappled paths. Back home, I spent time in the summer lounge, adding thoughtful touches like a vintage "lampe tempête" from a brocante and woven baskets to bring effortless elegance to the space. And in the kitchen, a batch of zesty oat biscuits filled the house with the scent of citrus and warm spices. These small, quiet moments—painting, decorating, baking, walking—capture the essence of slow, intentional living. "Love, Bake, Nourish" cookbook : https://amzn.to/3XEMzJy ** Zesty Oaty Biscuits recipe ** ingredients : 220gr (1 cup) softened butter 90gr (3/4 cup) white spelt flour (I used regular flour) 1 large egg 220gr (2/3 cup) thick honey (I used 180gr) 1/2 tsp ground cinnamon 1/2 tsp ground ginger grated zest of one unwaxed orange grated zest of one unwaxed lemon 30gr (3 tbsp) sultanas 60gr (6 tbsp) dried apricots, roughly chopped 1 tsp baking powder 140gr (1 cup 1/2) rolled oats method: Cream the butter for 5 minutes. Add a spoon of flour & the egg and beat for a further 2 minutes. Gently fold in the rest of the flour along with all the other ingredients. Cover and chill in the fridge for up to 1 hour. Preheat the oven at 180°C. Using a spoon, scoop out a small amount of the dough and place on a baking tray, making sure to leave space between each ball.
