It’s incredibly versatile—delicious with sweet spreads like jam, peanut butter, or sesame paste, and just as good with savory fillings like meat, egg, or cheese. . 食材 Ingredients▼ 中筋麵粉 200 g all-purpose flour, 200 g 黑芝麻粉 30 g black sesame powder, 30 g 糖 20 g sugar, 20 g 水 120 g water, 120 g 酵母 2 g instant yeast, 2 g 鹽 1/8 小匙 salt, 1/8 tsp . ■中文完整圖文食譜: https://bit.ly/43rtSMU . 步驟 Instructions▼ . 1. Add water, flour, black sesame powder, sugar, and yeast to a mixing bowl. 2. Mix on low speed for 3 minutes until a dough starts to form. 3. Continue kneading on medium speed for about 8 min. 4. Knead until the dough is smooth and elastic; no need to develop a full windowpane. 5. Shape the dough into a ball and place it on the baking mat. 6. Cover with a damp cloth and let the dough rest for 15 min. . ◆15 min. later◆ 7. Gently flatten the dough, then roll it out into a rectangle. 8. Fold both sides of the dough toward the center. 9. Roll it out again and fold both sides toward the center once more. 10. Repeat the rolling and folding process several times. 11. Press down the bottom edge of the dough. 12. Roll the dough up from the top. 13. Trim off both ends, then divide the dough into 6 equal portions. 14. Roll the trimmed ends into a small ball and place it in a measuring cup. 15. Place each portion of dough on baking paper and arrange in a steamer. 16. Put the steamer in an enclosed space along with a cup of hot water. . ◆about 50 min. later◆ 17. Let the dough rise until the small dough ball in the cup increases 1.5 times in volume (e.g., from 2 to 3 on the measuring scale). 18. Roll the small dough into a ball and place it on the steamer. 19. Add a cup of water to the outer pot of the Tatung cooker. 20. Place the steamer on the Tatung cooker. 21. Insert a chopstick or pot lid lifter under the lid to allow some steam to escape. 22. Cover with a cloth-wrapped lid. 23. Turn on the cooker. . ◆15 min. later◆ 24.
