Add 1 tablespoon oil. Season the chicken with salt and pepper, then sauté until cooked through. Remove to a plate. 3️⃣ Cook the Veggies: Add another tablespoon of oil to the pan. Once hot, stir-fry the cabbage, carrots, celery, and whites of the green onion for 1–2 minutes. Add the garlic and ginger, cooking for 30 seconds. Remove everything to a plate. 4️⃣ Cook the Noodles: Add the last tablespoon of oil to the pan. Add the noodles and cook for 1 minute. Add the sauce, tossing to coat the noodles evenly. 5️⃣ Combine Everything: Return the veggies, chicken, and fresh bean sprouts (if using) to the pan. Toss everything together. 6️⃣ Serve: Garnish with the greens of the chopped green onions and serve immediately. 💡 Notes Cabbage and Carrots: Save time by using a bagged coleslaw mix with shredded cabbage and carrots. Chow Mein Noodles: Yakisoba noodles (discard the seasoning packet) work well. For authentic results, use fresh chow mein noodles from an Asian market. Alternatively, try dry "Hong Kong" or "pan-fried" chow mein noodles, or lo mein noodles cooked and drained according to package instructions. Add More Veggies: Bok choy, bell peppers, mushrooms, snap peas, broccoli, or water chestnuts are great additions. Protein Options: Substitute beef, tofu, or shrimp. Vegetarian/Vegan Options: Omit the chicken or replace it with tofu or a vegan protein. Use hoisin sauce instead of oyster sauce for a vegan-friendly version.
