Soft & Fluffy Strawberry Swiss Roll Cake

Here is a recipe for strawberry roll cake made with rice flour. The process of making genoise can be a little difficult to determine the right consistency, but this recipe uses meringue which results in a moist and fluffy texture. ▷Ingredients ■Roll cake (375mm x 240mm) 4 egg yolks 30 g thick white sesame oil 30 g water 1 tsp vanilla extract 50g rice flour 4 egg whites 80g sugar Strawberry whipped cream 200 ml whipping cream 18 g sugar 8g strawberry powder 6-8 strawberries 30 g strawberry chocolate ▷How to make 1. make the roll cake batter. Add the thick sesame oil, water, vanilla extract, and rice flour to the egg yolks in this order and mix thoroughly. 2. Add sugar to the egg whites in 3 parts to make a glossy meringue. 3. Add 1/3 of the meringue mixture to the egg yolk batter and mix thoroughly. Add the remaining meringue and mix well. 4. Line a roll cake baking sheet with a cookie sheet, pour in the batter, and flatten the surface. Bake in a preheated oven at 160℃ for 15 to 20 minutes. Immediately after baking, remove from the baking sheet, cover with a cookie sheet, and allow to cool. 6. Wash the strawberries and cut off the stems. 7. Combine cream, sugar and strawberry powder, and whisk to stiff peaks while chilling in ice water. 8. Peel off the paper from the roll cake dough and cut off the dough at an angle from the far side as seen from you. Cut off the dough on the front side in a straight line. 9. Spread the strawberry cream, arrange the strawberries, and roll up the cake roll. Cover with paper and refrigerate for 1 to 2 hours. 10. Melt the strawberry chocolate in boiling water, put it in a squeeze bag, and cut off the tip of the chocolate in a thin line. Finish by brushing the chocolate diagonally across the cake roll.
