Perfect for St. Patrick's Day is my easy vegan colcannon recipe, oil free, whole food plant based. Even if you are not Irish you will love this recipe. It is the perfect 50/50 plate all in one pot. This easy vegan colcannon recipe is full of fiber with the green cabbage and green onions and great for weight loss. The full recipe for this easy vegan colcannon recipe is below. Enjoy! Ingredients: 1 1/2 pound potatoes russets or Yukon gold (I used Yukon) 3 cups chopped green cabbage 3-4 finely chopped green onions 1/2 cup of cooking water 1/4 cup unsweetened plant milk 1/2 tsp minced garlic 1/8 tsp. white or black pepper 1/4 to 1/2 tsp salt Instructions If you are using russets peel and quarter potatoes if you are using Yukon gold you don't have to peel but can if you want and quarter the potatoes and add to a pot and cover with cold water and cook till fork tender. While the potatoes are cooking add 2 T of water to a non stick pan and let heat up then add the cabbage and green onions to the pan and saute for 5 minutes on medium heat. After 5 minutes add the garlic and saute for another 3 minutes till cabbage is tender. Drain potatoes reserving 1/2 cup of cooking water and add the potatoes back to the hot pot. Mash the potatoes getting rid of all the bid lumps and mash till as smooth as possible. Add the water and milk and mix well. Add the cabbage and onions to the potatoes and add the seasoning and mix well. You can garnish with a few sliced green onions.
