Full recipes and all the links to what was discussed in this video are below. FLATBREAD SALAD FOR THE FLATBREAD 1 1/2 cups chickpea flour 1/2 tsp salt 2 T unsweetened applesauce 1 cup warm water. Add everything to a bowl and mix until smooth. Pour into a lined 9 x 12 baking sheet. spread evenly in pan and bake in a preheated 450 degree oven and bake for 18-20 minutes. Let cool on a cooling rack for 5 minutes . PLANTIFUL KIKI'S RANCH DRESSING 1/2 cup canned white beans 1/2 cup plain unsweetened soy milk 1 1/2 T white vinegar 1/2 tsp garlic powder 1/4 tsp onion powder 1 tsp dried parsley pinch of dill Place all ingredients except parsley and dill and blend in a small blender till smooth then stir in parley and dill. Set aside FOR THE SALAD 2 cups chopped arugula shredded carrots chopped red onions chopped cucumbers chopped cherry tomatoes chopped black olives place all ingredients into a bowl except tomatoes and olives, add dressing and mix well TO ASSEMBLE Spread 3 T of the dressing over flatbread. Spread the salad evenly over the flatbread and add the tomatoes and olives on top ROASTED TOMATO SOUP PASTA Cook 3/4 cup red lentil pasta to package directions 2 cups finely shredded lettuce like Romaine *2 cups roasted tomato soup 1/4 cup nutritional yeast )optional) When pasta is done drain well and add back into the hot pot. Warm the soup and add to pasta and add the lettuce and mix well. Turn the heat to low and stir well for a 2-3 minutes until lettuce wilts a bit. Add nutritional yeast and stir. turn heat off.
