What I eat in a day, unprocessed, WFPB vegan part 2 is what I will be sharing with you today. My last unprocessed video got quite a few views. So since you all liked that one so much I decided to do another one, Enjoy! Full recipes below. #whatieatinaday #unprocessed #wfpb AIR FRIED BREAKFAST POTATOES AND VEGGIES 5-6 small, precooked Yukon gold potatoes chopped Salt, garlic powder, onion powder, smoked paprika 1 cup chopped bell peppers 1/2 onion chopped 1 ½ cup chopped spinach Add spices to potatoes and air fry @ 400 degrees for 12-15 minutes. While potatoes are cooking Add the peppers and onions to a non-stick skillet and season with garlic salt and pepper to taste. Sauté until they start to get a bit of color. Add 1-2 T of water to deglaze the pan. Add the spinach and cook for a few minutes until spinach starts to wilt. Add the veggies to a bowl and top with potatoes. Taste and adjust seasoning if needed. Top with your favorite sauce, Ketchup, BBQ sauce, plant-based cheese sauce etc. 1-2 servings Creamy Roasted Butternut And Roasted Tomato Soup 2 cups butternut squash chopped 3 pounds tomatoes chopped 1 onion chopped 1 can white beans rinsed and drained 2 cups veggie broth 6-8 cloves garlic peeled and left whole 1 tsp. thyme 1 tsp ground sage 1/4 tsp ground rosemary 1 ½ cup finely chopped kale or spinach Preheat oven 425 degrees Add veggies to a baking dish and roast for one hour Add roasted veggies and any liquid to a pot and add broth, beans, greens, and spices to the veggies and mix well. Turn off heat Using an immersion blender blend until smooth. Add the kale and stir and let sit for 5 minutes. Add salt and pepper to taste. 4-6 servings PURPLE SWEET POTATO MASH 2 to 3 pounds purple sweet potatoes 2 cups cauliflower ½ cup to 1 cup unsweetened plant milk 1 tsp salt ½ tsp cumin chop purple sweet potatoes and boil until fork tender. Drain potatoes and cauliflower reserving ½ cup of cooking water. Using a hand masher, mash the potatoes to smooth out the large lumps then add milk, cooking water and spices. If you want them to smoother use a hand mixer. Serve with non-starchy vegetables. 4-6 servings OIL FREE HUMMUS RECIPE 1 can garbanzo beans rinsed and drained 1/2 cup aquafaba 2 cloves garlic 3 T tahini 1-2 T lemon juice 1/2 tsp salt 1/4 tsp cumin 1/4 tsp smoked paprika Add all the ingredients into a high speed blender for 2 minutes.
