Chicken Yakhni Pulao Recipe | Easy & Delicious Pulao at Home Aromatic and flavorful Chicken Yakhni Pulao recipe that is perfect for family dinners and gatherings. Made with tender chicken, fragrant basmati rice, and a rich yakhni (broth), this dish is simple yet packed with authentic taste. Try this easy step-by-step recipe and enjoy restaurant-style pulao at home. 🌿 Ingredients: Chicken – 1 kg Basmati rice – ½ kg (soaked 30 minutes) Onion – 2 medium (sliced) Yogurt – ½ cup Green chilies – 4 Alu Bukhara – 4 Ginger garlic paste – 2 tbsp Oil/Ghee – ½ cup Salt – to taste Black cardamom – 2 Green cardamom – 4 Cloves – 4–5 Black peppercorns – 8–10 Cumin seeds – 1 tbsp Black Cumin seeds – 1tbsp Bay leaves – 2 Cinnamon stick – 1 piece Star anise – 2 Javitri – 1 piece 🌸 Whole Spices (for yakhni): Black cardamom – 2 Green cardamom – 4 Cloves – 4–5 Black peppercorns – 8–10 Cumin seeds – 1 tbsp Bay leaves – 2 Cinnamon stick – 1 piece Coriander seeds– 2 tbsp funnel seeds – 1tbsp onion – 2 medium size garlic – 1 bunch Ginger – 1 inch piece Javitri – 1 piece 👩🍳 Method: 1. Prepare Yakhni (Broth): In a pot, add chicken, ginger-garlic, whole spices, salt, and enough water. Cook until chicken is tender and yakhni is flavorful. Strain the stock and separate chicken pieces. 2. Cook Pulao: Heat oil/ghee in a pot, fry onions till golden brown. Add ginger garlic paste, whole spices, chicken pieces and yougart. Cook for a few minutes. Add prepared yakhni (stock). Taste salt. When it starts boiling, add soaked rice. Add fried onion, green chillies and alu Bukhara. 3. Dum (Steam): Cook on medium flame until water dries. Cover and cook on low heat (dum) for 10–15 minutes. 🍽️ Ready to Serve: Your aromatic Chicken Yakhni Pulao is ready.
