Ingredients Used: Prawns, basmati rice, yogurt, onions, tomatoes, ginger garlic paste, green chillies, mint leaves, coriander leaves, biryani masala, whole spices, ghee, saffron milk. 🦐 Prawn Biryani (serves 3–4) Ingredients For marinating prawns 500 g prawns (cleaned & deveined) ½ cup thick yogurt 1 tsp ginger–garlic paste ½ tsp turmeric 1 tsp red chilli powder 1 tsp biryani masala (or garam masala) Salt to taste Juice of ½ lemon 👉 Marinate 20–30 mins (not longer, prawns cook fast) For rice 2 cups basmati rice Water (for boiling) 1 bay leaf 4 cloves 2 cardamom pods 1 small cinnamon stick Salt (rice should taste slightly salty) For biryani base 3 tbsp oil or ghee 2 onions (thinly sliced) 1–2 green chillies (slit) 1 tsp ginger–garlic paste 1 large tomato (chopped) ½ tsp turmeric 1 tsp chilli powder (adjust to taste) 1 tsp coriander powder ½ tsp garam masala Handful of mint leaves Handful of coriander leaves For layering Few saffron strands soaked in warm milk (or 2 tbsp milk) 1–2 tbsp ghee Fried onions (optional but amazing) 👩🍳 Method 1️⃣ Cook the rice Wash rice and soak 30 mins. Boil water with whole spices + salt. Cook rice till 70% done (still slightly firm). Drain and keep aside. 2️⃣ Make the prawn masala Heat oil/ghee in a heavy pot. Fry sliced onions till golden. Add green chillies + ginger–garlic paste, sauté till aromatic. Add tomatoes, turmeric, chilli powder, coriander powder. Cook till oil separates. Add marinated prawns + mint + coriander. Cook only 3–4 minutes till prawns just turn pink. Sprinkle garam masala and turn off heat. 3️⃣ Layer the biryani Spread half the rice over prawn masala. Drizzle saffron milk + ghee. Add remaining rice. Top with fried onions, mint, coriander. 4️⃣ Dum cooking Cover tightly (foil + lid if needed). Cook on low flame for 15–20 mins. Rest 10 mins before opening. 🍽️ Serve with Onion raita Lemon wedges Simple cucumber salad 🔥 Pro tips Don’t overcook prawns — rubbery prawns = heartbreak. Coconut milk (¼ cup) in the masala gives a coastal twist 😍 For extra aroma: add 1 tsp rose water or kewra water at layering stage.
