Our Baked Mussels with Seasoned Bread Crumbs and Parmesan is the ultimate one-bite appetizer for any party. Each mussel is topped with our crispy garlic butter and herb infused bread crumbs followed by delicious melted parmesan cheese and freshly chopped parsley. Hungry? Let’s make it! Follow us on Instagram: / thebluepeppercorn Like us on Facebook: / bluepeppercorn Follow us on Pinterest: / thebluepeppercorn Ingredients · 2 pounds cleaned and debearded mussels · 1 teaspoon salt (added to water with mussels) · 2 cups plain breadcrumbs · ½ cup panko breadcrumbs · 4-5 anchovies with capers, chopped · 1-2 tablespoons fresh parsley, finely chopped · 1 green onion, finely chopped (recommended but optional) · 4 cloves garlic, minced · ½ teaspoon paprika · ¼ teaspoon chili flakes · ½ teaspoon Italian seasoning · ½ teaspoon salt (breadcrumb mixture) · 1/3 cup parmesan cheese + more for garnish · 1 tablespoon olive oil · 4 tablespoons unsalted butter, melted · 1 lemon, juiced Method: Step 1: Preheat oven at 375° F. Step 2: Bring a pot of salted water (1 tsp) to a boil and add the mussels (the mussels should be submerged in the water). Cook for approximately 4-5 minutes or until the mussels have opened and discard any unopened ones. Remove from heat; separate the shell with the mussel meat and discard the empty shell. *Remove any excess water from the shell with the mussel. (see cooking note below) Step 3: In a large bowl, combine the breadcrumbs, anchovies, parsley, green onion, garlic, paprika, chili flakes, Italian seasoning, salt, parmesan cheese, olive oil, melted butter and lemon juice. Step 4: Fill each mussel with the breadcrumb mixture and top with more grated parmesan cheese. Step 5: Place the mussels on a baking dish and bake for 6-8 minutes or until the mussels are golden brown and the cheese is melted. Step 6: Garnish with freshly chopped parsley and/or lime juice and enjoy! Cooking Notes: *When separating the mussels, loosen the meat before adding the breadcrumb mixture to make it easier to eat once it's baked.
