Today Jill bakes up a batch of Swedish Cinnamon Rolls -- called Kanelbullar. We travel to Sweden in our trip Around the World in 80 Breads! I hope that I pronounced the Swedish word correctly or close to it. And, I'm hoping this is an authentic recipe. There are many recipes available and all seem to basically be the same. Thanks for watching this fun series! Swedish Cinnamon Rolls - Kanelbullar Ingredients 2 1/4 teaspoons active dry yeast 1 teaspoon granulated sugar 1/4 cup warm water 3/4 cup warm milk 1/4 cup granulated sugar 1/2 teaspoon salt 1/4 cup butter, melted 1 teaspoon ground cardamom 1 egg 3 1/2 cups unbleached or all-purpose flour CINNAMON ROLL FILLING: 3/4 cup brown sugar 1 tablespoon ground cinnamon 1/2 cup softened butter Mix the brown sugar and cinnamon. Set aside until ready to roll out the dough and spread the ½ cup butter over the dough. GLAZE TOPPING: 1 egg. This will be beaten at the time when you are ready to glaze the tops of the rolls and sprinkle sugar atop prior to putting the rolls into the oven. Course sugar of pearl sugar (pearl sugar may be hard to find) LET’S BEGIN WITH A FEW RECIPE SETUPS: Pre-warm milk Pre-melt butter and set aside to cool Preheat water for the yeast and sugar Mix together the flour, salt, and cardamom in a large bowl or the bowl of a mixer. RECIPE: Dissolve the yeast and sugar in the pre-warmed water a small bowl or measuring cup. Set aside -- the yeast will become frothy in about 10 minutes. In a large bowl or measuring cup (a quart-sized measuring cup worked perfectly for this), add the warmed milk, granulated sugar, melted butter, and egg. Mix well. Add these wet ingredients to the flour, cardamom and salt. Mix until a smooth dough forms. Add more flour if the dough feels too sticky. if using a mixer fitted with a dough hook, knead for about 5 minutes. If hand kneading, sprinkle a small bit of flour onto a work surface. Knead for about 10 minutes. You want a nice smooth, elastic dough. Not too sticky. Put the dough in a greased bowl, cover it with plastic wrap, and let it rise for 1 to 1 1/2 hours. It should double in size. (Mine took about 2 hours) Lightly flour a work surface and roll out the dough into a large rectangle, about 1/4 inch thick. Evenly spread the ½ cup softened butter over the dough. In a small bowl, Evenly sprinkle brown sugar and cinnamon mixture on top of the buttered dough. Tightly roll the dough from the long side into a log. Slice the log into pieces approximately one inch thick. Set the slices on a baking sheet lined with parchment paper or Silpat. Allow them to rise for an additional 30-45 minutes before covering. While the rolls are in this last rise, preheat the oven to 375°F. Use the beaten egg to coat the tops of the rolls and then follow with a sprinkling of sugar. Place the rolls in the preheated oven for about 20 minutes or until they are golden brown. Let them cool slightly before serving.'
