We're off to Lebanon to experience a tasty bread in my Around the World in 80 Breads Series. Za'atar Manakeesh. My hope is that I was able to make a bread similar to the real thing. Za'atar Manakeesh INGREDIENTS DOUGH 1 tablespoon instant yeast 1 cup warm water 1 teaspoon salt 1 teaspoon granulated sugar 3 cups all-purpose flour plus more for shaping 2 tablespoons olive oil plus more for coating bowl INSTRUCTIONS: MAKE THE DOUGH: In a large bowl, activate the yeast in warm water; allow about 10 minutes for it to activate. This mixture will get foamy on top. Add the salt, sugar and olive oil to bowl, mix to incorporate. Then add the flour into the wet ingredients. **I used a mixer with a dough hook. Once combined, I kneaded it for about 5-6 minutes. Then I kneaded it by hand for just a few moments to bring it together into a ball. **This step can also be accomplished with a bowl and spoon. Once the mixture has come to a shaggy ball, transfer to a floured surface and knead by hand for about 10 minutes. It will form a tight ball and not be sticky after the kneading process. Transfer the kneaded dough to a greased bowl. Cover with plastic wrap and place in a warm area. If you have a “proofing” feature on your oven, use it. If not, and your home is cool on the day you bake, you can place the bowl into your oven with JUST the oven light on. Do NOT turn the oven on. Let the dough rise about 1 ½-2 hours until doubled in size. ZA'ATAR SPREAD: While dough rises. Set aside for later use. 1/3 cup za'atar seasoning 1/4 cup olive oil Mix the za'atar with olive oil in small bowl until it forms a consistent and spreadable mixture. Preheat the oven to 450° F and line a baking sheet with parchment paper. DIVIDE THE DOUGH: I divided it in half. With one of the halves I made one large disc and then 4 smaller ones with other half of the dough. The discs should be about about ¼ inch thickness. Place the discs on the parchment-lined baking sheet. Place 2-3 tablespoons of za'atar spread on each dough and use the back of the spoon to spread evenly. This mixture was enough to cover the larger disc and the four smaller ones. Bake in the preheated oven for 10-12 minutes, until the dough becomes light golden in color and puffs slightly. Enjoy!
