Place apples in a greased dish. Top with brown sugar mixture, then with oats. Whisk together eggs, water, milk and cream, pour over oats. Cook covered until oats are tender. Serve oatmeal topped with walnuts. ________________________________________ Spinach Mushroom Frittata Ingredients 8 eggs ¼ cup milk 1 tablespoon Dijon mustard 2 teaspoons thyme 1 teaspoon garlic crushed 1 tsp salt ½ teaspoon black pepper 4 oz cheese, shredded 8 oz sliced mushrooms 2 tablespoons olive oil 1 sliced spring onion 5 oz spinach, chopped Method Whisk eggs, milk, mustard, thyme, garlic, salt, pepper, and cheese. Heat oil. Add mushrooms, spring onion and spinach stirring until wilted. Pour egg mixture into pan, and tilt to distribute egg evenly over vegetables. Cook over medium until eggs around edges of pan begin to set. Let cook covered until eggs are set.
