Then add rest of the ingredients and mix well. Leave in the fridge overnight for the flavours to combine well. Prepare the fish sauce two nights before making the pasta. 2. The night before making pasta - Drain the jackfruit and pull of the pieces into strips, squish them between fingers, until they look like tuna pieces from the can. Divide the jackfruit between two bowls and pour half of the fish sauce into each jackfruit bowl. Place half of the jackfruit with fish sauce in a container and cover it with a nori sheet. Place the other half of the jackfruit on top of the nori and cover it with the second nori sheet. You can squish it lightly with your fingers so the nori sheet gets moist. Place a lid on the container and put it in the fridge overnight. 3. In a pan, saute the onion for a few minutes. Add a bit of water if needed to prevent it from sticking. Add basil, garlic, chili and tomatoes. Place a lid on top and bring to a boil, then lower the heat and let simmer for 10 to 15 minutes. 4. Add the jackfruit, break up the nori pieces and cook for 10 more minutes. 5. Cook the pasta. I used chickpea spaghetti where recommended cooking time is 7 minutes. However, I always cook them for 4:45 minutes exactly and then rinse them in tepid water. This way they don’t stick together and don’t fall apart after I mix them with the sauce. Save 1 cup of pasta water as well. 6. Add the mayo to the jackfruit with the almond milk and combine the sauce with the pasta. Enjoy! DISCLAIMER: There may be affiliate links in this description.
