Today, I'm prepping a flavourful, chunky apple pie filling by marinating, roasting, and caramelizing the apples for that ultimate pie experience. Whether you're a pie-baking beginner or a seasoned pro, you’ll find tips here on handling apples, creating a foolproof pie crust, and achieving the best flavour and texture. Join me as we put an old-school apple pie method to the test and see if this time-intensive approach is worth it! Filling: 5 lbs crisp-variety apples, peeled, cored and sliced 1 tsp (5 mL) ground cinnamon 1/2 cup (125 mL) brown sugar 3/4 cup (175 mL) maple syrup 6 tbsp (90 mL) butter, cubed 15 mL (1 Tbsp) instant tapioca 1 - 9½" double crust pie shell - Our recipe: • How To Make Flaky All Butter Pie Past... Method: In a sealable container mix together the apples, cinnamon, brown sugar and maple syrup. Put the lid on and stick in the fridge for 24-48 hours. Shake or mix occasionally. Pre-heat oven to 400ºF. Using slotted spoon move the apple slices to a lined baking sheet and roast in the oven for 30-40 minutes. Pour the apple juice from the container into a pot and simmer down to a thick syrup. Allow the apple slices to cool to room temp. Lower the oven temp to 375ºF Sprinkle the tapioca onto the bottom of a pastry lined pie tin, then spread in the roasted apples. Dot the top with the butter, and then pour over the syrup. Egg wash the rim and secure the top crust on. Egg wash the top and sprinkle with sugar if desired. Bake at 375ºF for about 60 minutes until the pastry is golden brown.
