Toss with balsamic vinegar, oregano, dried thyme, 1 Tbsp olive oil, and salt until evenly coated. Dry the Tomatoes Arrange cut side up on parchment-lined sheet tray with a wire rack. Bake at 250°F for 2–4 hours (3 hours typical for San Marzanos) until wrinkled, chewy, and reduced in size. Infuse the Oil: In a small saucepan, combine 1 ½ cups olive oil with garlic cloves and thyme sprigs. Bring to a gentle simmer, then remove from heat. Do not scorch. Pack the Jars: Place cooled tomatoes into a clean jar. Cover completely with the warm herb/garlic oil, pressing down to remove air bubbles.
